Spinach Cheese Stuffed Mushrooms Prep Time: 35-40 min. Serves: 4 Ingredients: 1/2 cup Parmesan cheese, finely shredded 2 tbs. kalamata olives, finely chopped 1/2 tsp. Italian seasoning 3/4 cup marinara sauce 4 large Portobello mushroom caps 1 cup ricotta cheese 1 cup fresh spinach, finely chopped Directions: - At first, preheat an oven to 450 degrees F. - Prepare a baking dish in advance; grease it with butter lightly using your hands or coat it using cooking oil spray. - Season mushroom caps with pepper and salt as required and place in the prepared dish. - Roast them for 25 minutes until softened. - In a bowl of medium size, thoroughly mix the ricotta, ¼ cup parmesan, spinach, olives pepper and Italian seasoning. - Heat the marinara sauce in your microwave for 20-30 seconds. - Take out the cooked mushrooms from oven and top with 1 tbs. sauce into caps equally. - Fill each cap with enough mixture; scatter the remaining cheese on top. - Bake for about 8-10 minutes until cheese melts. - Serve warm with the remaining sauce.
