Philippine adobo (from Spanish adobar: "marinade," "sauce" or "seasoning") is a popular Filipino dish and cooking process in Philippine cuisine that involves meat, seafood, or vegetables marinated in vinegar, soy sauce, garlic, and black peppercorns, which is browned in oil, and simmered in the marinade. It has occasionally been considered the unofficial national dish in the Philippines. Cooking Procedures : 1. In a saucepan, put pork, vinegar, 1 tbsp. garlic, bay leaf, soy sauce, salt and pepper. 2. Bring to a boil then simmer uncovered until pork is tender. If it dries up then add water. 3. Remove meat from sauce. 4. In a skillet, heat oil then sauté remaining garlic. 5. Add meat and fry until light brown. Add back the sauce. 6. Remove from heat and serve. Ingredients: 2 lbs chicken cut into serving pieces 3 pieces dried bay leaves 8 tablespoons soy sauce 4 tablespoons white vinegar 5 cloves garlic crushed 1 1/2 cups water 3 tablespoons cooking oil 1 teaspoon sugar 1/4 teaspoon salt optional 1 teaspoon whole peppercorn
