Baked Tofu Tacos with Creamy Cilantro Sauce

Marinated and baked tofu is a mouth-watering, meat-free alternative stuffing
for tacos. Add your favorite toppings, along with creamy homemade cilantro
sauce.

Ingredients
Baked Tofu:
1 pound firm tofu (drained)
2 tbsp coconut aminos or soy sauce
½ tsp liquid smoke
1 tbsp smoked paprika
1 tsp cumin
¼ tsp oregano
Tortillas (to serve)
Creamy Cilantro Sauce:
½ cup raw cashews
½ avocado (peeled and pitted)
¼ cup packed cilantro
¼ tsp garlic powder
Freshly squeezed juice 2 limes
Salt and ground black pepper (to season)
¼ - ½ cup coconut milk (to thin)
Toppings:
Tomatoes (diced)
Sweet corn kernels (uncooked)
Fresh spinach (chopped)
Freshly squeezed lime juice
Cilantro (chopped, to garnish)
Directions:
1. First, press the tofu. Line a plate with kitchen paper towel. Place a drained
block of tofu on top of the towel. Using more kitchen towels, cover the tofu.
Place then another plate on top of the tofu and weigh it down with bags of
dried beans. Press for approximately 20 minutes before cutting into cubes.
2. Preheat the main oven to 400 degrees F.
3. In a ziplock bag, combine the coconut aminos with the liquid smoke,
paprika, cumin, and oregano.
4. Add the cubes of tofu to the bag, seal, and mix well until evenly and well
coated. Transfer the bag to the fridge for a minimum of 30 minutes.
5. Remove the tofu from the bag, shaking gently to remove any excess
marinade.
6. Next, arrange the tofu on a baking sheet lined with parchment paper and
bake in the preheated oven for 15 minutes. Flip the cubes over and continue
to bake until firm, for 10-15 minutes.
7. While the tofu bakes, prepare the cilantro sauce.
8. Soak the cashews in warm water for 25-30 minutes firstly, then drain.
9. Add the soaked cashews, avocado, cilantro, garlic powder, fresh lime juice,
salt, and black pepper (to taste). Puree until silky smooth. In ¼ cup
increments, add the coconut milk and blend until you achieved your preferred
consistency.
10. To assemble and serve: Arrange the spinach on a tortilla followed by the
baked tofu cubes and preferred toppings.
11. Enjoy.
